Reminder What Makes Matcha Tea So Powerful
Matcha tea has been proven to have the highest antioxidant rating of all superfoods. According to The ORAC test (Oxygen Radical Absorption Capacity), which measures the antioxidant levels in foods, Matcha green tea measures 1384 units per gram. For context, that’s:
- 13x the antioxidants of pomegranates,
- 15x the antioxidants of blueberries, and
- 125x that of spinach.
Furthermore, Matcha is very high in catechin antioxidants. Its most powerful catechin is epigallocatechin gallate (EGCG), shown to:
- reduce inflammation,
- fight free radicals, and
- help prevent a whole range of chronic diseases.
Matcha-gato Recipe:
Ingredients:
- 2 teaspoons high-quality (ceremonial grade) Matcha powder like KOSHO Byuti Organic Matcha Tea
- 2 tablespoons hot water (not boiling)
- 2 scoops of good quality vanilla ice cream (we love our local Charlies gelato)
- (optional) Toasted sesame seeds or crushed pistachios for garnish
Instructions:
1. Prepare The Matcha
In a bowl, sift the Matcha powder to remove any lumps.
Add hot (not boiling!) water to the Matcha powder. The water should ideally have 80 Degrees Celsius so as not to burn the delicate tea.
Whisk vigorously using a bamboo Matcha whisk or a small regular whisk until the Matcha is fully dissolved and a frothy layer forms on top. Set aside.

Is a 100% pure, single origin, organic Matcha green tea from selected farmers on the southern Japanese island of Kyūshū. KOSHO Byuti Organic Matcha has a mild yet rich flavour and deep, green colour.
Please note: KOSHO Byuti Matcha can appear to have little clumps. This is not due to moisture, but the static that can develop between the microfine, granite-ground Matcha particles.
2. Assemble The Matcha-gato
Place two scoops of vanilla ice cream into serving glasses or bowls.
Pour the prepared Matcha over the vanilla ice cream. The hot Matcha will start to melt the ice cream, creating a delightful blend of warm and cold sensations.
Sprinkle toasted sesame seeds or crushed pistachios over the Matcha-gato for added texture and flavor.
3. Enjoy (Quickly!)
The key to a perfect Matcha-gato is to serve it immediately so that you can enjoy the contrast between the warm Matcha and the cold vanilla ice cream.
Use a spoon to scoop up both the Matcha and the ice cream together, savouring the unique combination of flavours.
